Today I had my first tomato sandwich of the summer, and man, was it delicious. I've been waiting for my tomatoes to ripen and realized last night that the ones I've been waiting for were actually green heirloom tomatoes that would never turn red! Last year I planted Aunt Ruby's German Green heirloom tomatoes from Livingston Seed Co. They were so good. I only got a few of them last summer, so I've been waiting for this sandwich for a long time.
2 slices of bread, toasted
1/2 large tomato, sliced
salt & pepper
Spread a thin layer of mayo on both pieces of toast (helps prevent the bread from getting soggy). Arrange tomato slices on toast and sprinkle with salt and pepper. Top off with the other piece of toast and enjoy!
I'll be eating these for the rest of the summer...or at least until my tomato supply runs out.
