Spicy Deviled Eggs

I love a good deviled egg, but I've had too many bad ones to believe that you can just throw a few ingredients together and end up with something delicious. It should be that easy but apparently it's not. The most common mistake seems to be substituting Miracle Whip for REAL mayonnaise.They are not the same thing and are not interchangeable!  Maybe I'm just more sensitive to the sweet taste of Miracle Whip (being diabetic and all), but when I bite into a deviled egg I do not expect it to be sweet! 


At any rate, here's how I make them:

6 hard-boiled eggs
2-3 tablespoons real mayonnaise (use whatever brand you prefer, just avoid the sweet stuff!)
1 teaspoon mustard
1/2 teaspoon smoked paprika (plus more for garnish)
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon chipotle Tabasco sauce (optional) 
course salt & pepper


1. Peel the eggs, cut in half lengthwise, and carefully scoop the cooked yolks into a bowl. Set the whites aside. (The yolks with the gray ring around them in the photo above are slightly overcooked. You can use yolks that are slightly overcooked for deviled eggs, but throw them out if they are really bad. Overcooked whites get rubbery, so toss those out too.) 

2. Use a fork to break up the yolks, then mix in 2 tablespoons mayo, mustard, paprika, cayenne pepper, and Tabasco. Once it's all mixed together, add more mayo if the mixture seems too dry. If the filling seems too thin, add another yolk. Season to to taste with salt and pepper.

3. Add a spoonful of filling to each egg, and sprinkle with paprika just before serving.


I also like my deviled eggs spicy, but these are perfectly good without the cayenne pepper and Tabasco sauce. Chipotle Tabasco adds a bit of smokiness (along with the smoked paprika) and isn't very spicy, so feel free to use regular Tabasco if you prefer something spicier.

  1. I love deviled eggs, and I'm guessing I'll have a few to make after we colour eggs this year. For some reason I've never thought of making deviled eggs, we usually just have egg salad sandwiches.
